Spring Onions

May: I wasn't going to follow the progress of the spring onions, they did nothing and looked as if they were just gong to keel over and die having reached the heady heights of three inches. Impressed, no, nor was I.

June 21st: Still growing but lifeless and limp, I get that too!

July 1st: Having been served a plateful of neglect and left outside in the rain things start to improve. July 4th: Looks like they've learnt to stand up for themselves at last. July 30th: OK perhaps the least exciting thing we've grown so far, their not in the least entertaining.

August 22nd: Dug up.
Well here they are, normal spring onions, nice size too, now,  what to do with them?

 KILL, KILL, KILL . . . I mean, lets see what we can do with them.

First of all, I'm a bloke, I don't cook OK, this is just for research reasons only, don't imagine I'll be doing any more for any other reason than to see the fruit of my loins . . . er . . garden, used in the appropriate manor and I figure I'm the best person to do it, OK. I didn't wear an apron, I live on the edge.

(The above was for the benefit of my wife just in case she gets some ideas).


Ingredients:

Potatoes obviously, spring onions, eggs, and mayonnaise. You do get to jazz it up.

I used 3 eggs, because that's what was in the fridge.

Potatoes were cut up in to decent size chunks and boiled for 15 minutes skin on.

My home-grown spring onions were chopped up finely with a knife (a shovel was to big) I found some of yesterdays gammon joint left over, finely chopped and I managed not to eat it all. The eggs were boiled for 10 minutes to make sure they were hard-boiled. Let it all go cold.

One  large bowl, add potatoes . . .  . . . and spring onions, chopped gammon and not forgetting . . .  . . . the eggs, also  chopped, well mashed with the back of a fork.

Not essential but adds a bite of bite, white vinegar. Now the mayonnaise, I used 3 large globs (technical term) just use as much as you like to get the thickness you like. The end result was colourful and even though I say myself, really tasty.

 

In an ideal situation and had the summer sun been around when it should have been then most of the ingredients would have been home-grown, peppers and cucumber would have been added, a Bar-b-que lit and a good time had by all. Never mind.
